Serves 4

What you need:

  • Salt and Pepper
  • 1 Pound of D&D Market’s Veal Cutlets (chicken, pork or beef cutlets can be substituted)
  • 1/4 Pound Prosciutto (sliced thinly)
  • 6-8 Fresh Sage Leaves
  • 1-2 Tablespoons Butter
  • 3 Tablespoons of Olive Oil
  • 1/2 Cup White Wine

What to do:

  1. Sprinkle salt and pepper on cutlets.
  2. Layer each veal slice with one slice of prosciutto and 1 sage leaf.
  3. Roll up loosely and secure with a toothpick
  4. Place olive oil in a pan over medium heat. Place the rolled veal in the pan and cook jiggling the pan so all sides will be cooked for a few minutes.
  5. Add white wine and cook until it evaporates or reduces by half.
  6. Whisk in the butter.
  7. Remove to a warm platter the golden veal and pour the sauce over.
  8. Serve with a crisp Arugula salad and your favorite bottle of wine. Enjoy!
