Serves a Crowd
What you need:
- 1 Small Watermelon (peel removed, cut into 1 inch thick cubes)
- 1 Small Cantaloupe (peel removed, cut into 1 inch thick cubes)
- 1 Small Honeydew (peel removed, cut into 1 inch thick cubes)
- 1 Pound of Prosciutto di Parma or Speck
- 1 Pound of Taleggio Cheese (rind removed, cut into small cubes)
- Champagne
- Fresh Mint Sprigs.
What to do:
- Arrange melon on a platter.
- Top each round with a slice of Taleggio, then top with Prosciutto or Speck or both (you can alternate).
- Top each one with a mint leaf and skewer and sprinkle the entire platter with champagne (place thumb over the bottle opening to sprinkle.
- Serve with a glass of champagne or prosecco. (This appetizer is a crowd pleaser.) Enjoy!
