Tastes of Italia recipe

Serves 4

What you need:

  • 4 Sirloin or NY Strip steaks 1/2-3/4 inch thick
  • Coarse Sea Salt
  • 3 Tablespoons Coarsely Ground Fresh Black Pepper
  • 1-2 Tablespoons Olive Oil
  • 1 Cup Cabernet Sauvignon Wine
  • 2 Tablespoons Butter

What to do:

  1. Pat the steaks dry.
  2. Sprinkle with salt and pepper, pressing the pepper into the surface with your hands. Set aside.
  3. Heat oil in a large skillet on medium-high heat, until skillet just starts to smoke.
  4. Carefully place steaks in skillet. Cook about 3 minutes on the first side then turn steaks over and cook the second side until deep brown, about 3 minutes for medium rare.
  5. To test for doneness, press meat with back of knife.  If firm, meat is probably done.
  6. Transfer steaks to a platter and tent with foil.
  7. Pour fat out of skillet and add wine.  Cook on medium heat for about 7 minutes or until wine reduces to about 1/4 cup. Scrape bits off bottom and whisk in butter.
  8. Drizzle sauce over steaks and serve.  Serve with a nice tomato and arugula salad and your favorite bottle of wine.  Enjoy!
