Serves 4

What you need:

  • 1 Medium Carrot
  • 2 Medium Celery Stalks
  • 1/2 medium onion
  • 4 Tablespoons Extra Virgin Olive Oil
  • 1 Pound of D&D Market’s Meatball Mix
  • 1 (28oz) Can of D’Aprile Tomatoes (crushed or pureed)
  • 1 Teaspoon Tomato Paste (optional)
  • 1/2 Cup Pasta Water
  • Salt and Pepper to Taste
  • 1 Pound DeCecco Penne Rigat
  • Top with a dollop of Liuzzi Ricotta and a sprinkling of Parmigiano or Romano Cheese

What to do:

  1. Chop the Carrot, celery and onion finely.
  2. In a large pot, heat olive oil and add chopped vegetables and sauté until the onion is pale in color.
  3. Add the ground meat and sauté until it starts to brown.
  4. Add the tomatoes and paste if desired.
  5. Add salt and pepper and reduce heat to low. Cover and cook sauce for about 3 hours over low heat stirring occasionally.
  6. When ready cook the penne in boiling salted water. Drain well.
  7. If sauce is too thick add the pasta water to the sauce.
  8. Toss the pasta with the sauce.
  9. Top each plate with a dollop of ricotta and Parmigiano or Romano Cheese.
  10. Serve with your favorite salad and wine. Enjoy a D’Aprile Family favorite!
