
Serves 6-8
What you need:
- 5 Pounds of D&D Market’s Meatball Mix
- 1 Cup Old Italian Bread soaked in milk (squeezed out and shredded)
- 1/2 Cup Diced Onions
- 1/2 Cup Diced Carrots
- 2 Cloves Garlic (diced)
- 1 Cup Chopped Parsley
- 2-3 Tablespoons of Olive Oil
- 1 (28 oz can) D’Aprile or San Marzano Tomatoes (chopped)
- 1/2 cup Freshly Grated Parmigiano or Romano Cheese
- 2 Large Eggs
- Salt and Pepper to Taste
- 1/2 Cup Of Shredded Mozzarella can be added too
What to do:
- Preheat oven to 350 degrees. Spray a rimmed baking sheet with a cooking spray.
- Saute onions, garlic, carrots, celery in olive oil. Add the tomatoes and cook for about 15 minutes.
- Let Cool. (Reserve about 1 cut of the tomato mixture for the top).
- In a large bowl, combine, meat, bread, onion, garlic, parsley, tomatoes, cheese, eggs, salt and pepper. Mix well.
- Shape meat mixture in a loaf. Top with Tomato mixture.
- Bake for 1 hour or until mealoaf is nicely browned.
- Remove from oven and let stand 10 to 15 minutes before slicing to serve. The recipe could be doubled and the loaves can be frozen to make meals easier. Enjoy!
