
Serves 4
What you need:
- 1 Chicken (cut in half, washed well and patted dry)
- 6 Sprigs of Rosemary
- 4 Cloves of Garlic (smashed and chopped)
- 1 Small Onion (sliced)
- 2 Tablespoons of Salt
- 1 Tablespoon of Coarse Black Pepper
- 1 Tablespoon of Paprika
- 1 Cup of White Wine
- 1 Tablespoon of Olive Oil
- 1 Zip Lock Plastic Bag
What to do:
- Rub all of the ingredients on the chicken, under the skin and all around, massaging it well. Place it in a zip lock bag, seal it and refrigerate over night.
- Wash and Dry 2 heavy Bricks and wrap in foil.
- Preheat grill to medium-high heat.
- Place the chicken skin side up on the grill and put the bricks on top flattening the chicken.
- Check occasionally as for it not to burn. Cook approximately 20-30 minutes on each side. Flip the chicken and repeat the process.
- Once cooked remove from grill, let sit for 10 minutes. Cut into quarters.
- Serve with a grilled potato salad, arugula salad and your favorite bottle of wine. Enjoy!
